I’ve been having a nagging but growing concern that probably started a couple of weeks ago when I was working at the market and some chef called from New York City and wanted us to ship him 100 pounds of ramps. All too often in humanity’s history we have discovered something, spread the word, and then ransacked the earth. We are the stewards of these ramps and in order to be sustainable, we need to be careful harvesting.
Yes. That is a concern with wild things. We do need to be good stewards. Ramps, however, can also be cultivated fairly easily from what I’ve read. Though we still want to be careful, I am less concerned about over harvesting of wild edibles that are readily cultivated.
What we need is a few ramp farmers now. 🙂
